Ingredients
- 10-12 habaneros
- 2 cloves of garlic
- 1/2 cup of vinegar (white)
- 1/2 cup of onions
- 1/2 cup of carrots
- 1/4 cup of lime juice
- 1 tbsp vegetable oil
- salt and pepper
- cayenne pepper
- sugar
preparation time: 30 minutes
Okay enough text, lets get some pictures going.
First you will need to dice and chop up the habaneros, the garlic, onions and the carrot.
oil a pan over medium heat, add the onions and garlic first
Once the onions get translucent throw in the carrots and some of the habaneros. Cook for a maximum of 5 minutes.
then, add the water and let it boil.
Let it cook for a couple of minutes, then add some more habaneros (for more hotness).
after another 5 minutes of cooking (roughly) add in a pinch of salt, pepper and sugar.
Now grab your blender ( I hope you have one). If not this can get tricky and take some time. Stop and dice and cut the rest of the habaneros until they become puree like.
Combine the puree with the stuff in the pan and let it simmer on low-medium heat. Add the lime and vinegar near the end. Once all is said and done it should look like this.
You can add in a few dashes of cayenne pepper in the end for extra flavor.
Let it cool down and bottle the beast. Be careful habaneros are HOT.
